I don’t know how many times I’ve had meatloaf in my life. My mom used to make it and as a kid, I never though much about it. I liked it, but I had no idea what it was nor what it took to make it. Moms….unsung hero’s of our life. Well as I got older and I started to cook for myself, I’m just not going out to a restaurant to pay inflated prices for stuff I can make at home, one of the things I learned to make, was, of course, meatloaf. Now there are a thousand ways to make it. But what I like about it is that it’s easy to make, and honestly, you can throw the whole kitchen sink into it. I mean literally, not figuratively. What I mean is you can throw pretty much anything into it that you like. Vegetables, spices, different meats, heck…I bet you can even throw in some fruit, and it’ll come out great. So here is my way of making it. Use your imagination….and enjoy!
Ingredients:
2 lbs of ground beef
1 cup of breadcrumbs
1 egg
4 pieces of garlic
1 teaspoon of salt
1 tablespoon of black pepper
1 tablespoon of oregano, basil and parsley combined
1/4 cup each of chopped celery, carrots and onion
2 tablespoons of Worcester sauce
The Glaze:
1/2 Dijon Mustard
1/2 Ketchup
1/3 cupBrown sugar
1/4 cup hot sauce
Directions:
So the whole point of this is to blend all the ingredients in a bowl, then put it in a loaf pan, pat it down, and bake it. After 15 minutes, cover it with the sauce, and let it bake until it’s done. Couldn’t get any easier. It’s great for a dinner, lunch, make a sandwich out of it, or just munch on it for a snack.
Heat up a skillet with medium heat and put a nice blob of butter in it and let it melt, but not burn.
Once the butter is melted and sizzling a bit, throw in the vegetables and let them cook for about 5 minutes, stirring them until they soften.
Preheat your oven to 350F.
Add all the ingredients, except the glaze ones, to a bowl. Mix thoroughly. The put in a loaf pan and pat the meat down.
In a separate bowl combine all the glaze ingredients well.
Bake it for an hour but after 15 minutes, add the glaze on top. Be sure to spread it as evenly as you can over the whole loaf. Put it back in the oven and let it cook.
Once it’s done, let it rest for about 5 minutes and the serve.
