Corn Bread Muffins

Are you looking for an easy to make snack? Something delicious that doesn’t take a lot of effort but comes out just great! Try these corn bread muffins! You can also make just a loaf of corn bread too! I’ve made this many times and honestly, each time it gets better and I come with another idea to make it so. I love this for a quick breakfast (with hot butter on it, or honey or even cream cheese!) or with coffee for a morning or afternoon bite. The ingredients are very simple, very easy to put together and I encourage you to use your imagination. Add the favorite things to it you like: coconut flakes, raisins, chocolate chips, even jalapeƱos! I haven’t tried the jalapeƱos yet, but as soon as I work up the courage to, I’m going to try it. Have fun and enjoy eating these!

Ingredients:

1/2 cup butter

1 cup of sugar

2 eggs

1 cup of milk

1/2 teaspoon baking soda

1 cup of cornmeal

1 cup of flour

1/4 teaspoon salt

1/2 cup raisins

1/2 teaspoon cinnamon

1 teaspoon vanilla extract

Directions:

First gather all your ingredients in front of you.

Mix the eggs in bowl.

Mix the milk and baking soda in another bowl.

Making this moves quickly so the more you have all your ingredients already prepared and measured out, the easier this will go.

Preheat your oven to 375F.

Melt the butter in a skillet or pot. Stir in the sugar, then stir in the eggs. I use a whisk for this. Make sure everything is well mixed together. Don’t use high heat, use medium heat.

Then add the milk and baking soda mixture. Combine well.

Then add the cornmeal, flour and salt. Mix well.

Pour into greased muffin pan or loaf pan.

Bake for 30 to 40 minutes but check on it to make sure it doesn’t burn.

Serve hot with butter or honey or syrup. It even tastes great cold!
