f you have not tried parsnips, you are in for a great surprise. They look like carrots, but they aren’t. I wash them off, I do not remove the skin, cut them up, boil them until they are very soft, churn in a food processor and serve hot with butter.

They have a wonderful nutty aroma when cooking and they retain that nutty flavor when you eat them. They have the consistency of mashed potatoes but much, much more flavorful. They are sure to become one of your favorites!
