I bought a pork picnic, it cost about $12 for 10 pounds. I brought it home, took it out of its plastic wrapping, washed it off. Then I dried it with a towel. On the bottom of it is a large layer of fat. I took a knife and slowly peeled the fat layer off the meat then I threw the fat away. Cutting the fat layer off takes a little bit of time. Then I coated the pork with olive oil, rubbed salt into it and brown sugar, smoked paprika and garlic powder. In the crock pot I put one large chopped onion and enough real coca cola to cover the meat half way. Slow cook it on low for 8 hours, or overnight even. Take the pork out of slow cooker, after that amount of time. It will probably come out in pieces but don’t worry, you are going to shred it anyway. drain any liquid from the meat and then with two forks, one in each hand, gently pull the pork apart. It’s going to take a few minutes and your hand might get tired, so take it easy and rest. Once you have pulled all the pork apart, you will see it’s a bit stringy, but that is how it’s supposed to be. Heat some pork up in a pan on the stove and when it’s piping hot, put in on a roll or bread with some Barbeque sauce…and you will be in heaven! Refrigerate the rest…or better yet …Eat it!
