The secret to a real tender fall off the bone chicken is to marinate it, for at least 2 hours, and preferably overnight. You need to perforate the chicken with a fork by punching holes in it in several places. This lets the brine you soak it in soak into the meat. Speaking of brine, this is what you marinate the meat in. You can make your own, or buy it in a store. Basically, it’s water and spices. Enough to cover the chicken. As you will see in my video, you will see the spices I used to make my brine. It’s the liquid in the pot.. so you just soak it in the brine, take it out and let it come up to room temperature for about an hour, then I braise the chicken in a pot. I put the heat on medium high, wait until the pot is hot, but I also add butter or my favorite, bacon grease, and cook the chicken for about 5 minutes on each side. Then I add enough brine to cover it up about 1/4 of the way in the pot, then put in the oven and bake it for 45 minutes at 350 degrees. Let it rest for a few minutes before you serve it, but yoiu will love it.
